Product is mainly sourced locally from family farms and processed at federally inspected beef plants.

We have several diverse cuts of raw frozen bones that are shipped to us in boxes and kept frozen until slowly smoked with hickory wood in a CFIA approved smokehouse for approx. 6-8hours.

The smoked product is then removed from the smokehouse, cooled and placed in our specialised drying room.

Our product being 100% natural, dry smoked, with no preservatives means that for optimum shelf life; if must first be placed in a drying room where fans circulate air movement and a dehumidifier keeps moisture levels low.
